Bahan-bahan ( 15 ketul )

  • 4 cwn tpg (doh)
  • 3/4 cwn minyak masak
  • 3/4 cwn air
  • 1 sk garam
  • (Bahan Utk Inti)
  • 3 biji kentang
  • 2 genggam udg kering
  • 1 ulas bwg besar
  • 3/4 sudu rempah kari dan sedikit daun kari

Cara-cara masak Karipap Ranggup

  1. masukkan minyak yg betul2 panas dalam tepung
  2. kacau dgn senduk, kacau dgn jari sampai berderai.
  3. masukkan air. uli sampai rata sebati
  4. bulat kecil2 sesuai utk size 1 biji karipap
  5.  bila dah siap. tutup dgn plastik menguna rolling pin, gelek , jgn terlalu nipis. masukkan inti, klim goreng dengan api perlahan.
  6. (Cara Membuat Inti)
  7. tumiskan bwg besar di dalam kuali
  8. masukkan udg kering diikuti dgn rempah kari
  9. masukkan daun kari
  10. kacau sehingga sebati dan naik bau
  11.  masukkan kentang , kacau sehingga sebati letakkan di dalam karipap dan goreng seperti biasa (boleh juga ditambah ayam atau daging sebagai perencah)

Resepi Kek Lapis Pelangi Kukus

Bahan-bahan ( portion untuk 1 family )

  • 4 biji telur 1/2 cup gula 1 tin kaya 1cup batter 1sudu kecil ovelete 1 sudu kecil baking powder 1 cup susu segar 1 sudu kecil bikarbonat 1 1/3 cup tepung gandum 1/2 sudu kecil esen vanilla pewarna hijau,kuning dan merah

Cara-cara

  1. pukul telur dan gula hingga kembang
  2. masukkan 1 cup batter + ovelete +kaya and mix together
  3. masukkan esen vanillah dan gaul sekata
  4. ayak tepung + soda bikarbonat +baking soda dan campurkan pada adunan telur tadi
  5. bahagikan pada 3 bahagian iaitu hijau,kuning dan merah di dalam mangkuk yang berbeza
  6. setelah selesai panaskan kukusan hingga air mendidih.sediakan bekas 4 segi tepat dan gliskan dgn marjeris lebih elok letakkan kertas di bahagian tapak bekas itu untuk mengelakkan dari dasar kek melekat.
  7. kukus mengikut lapisan pastikan setiap lapisan yg trdahulu betul2 masak supaya lapisan yang seterusnya tidak bercampur.setiap lapisan dikukus selama 10 minit pling maksima jika lapisan yg di lapis itu nipis 5 minit sudah memadai.lakukan lapisan setrusnye sampai habis
  8. stelah selesai dikukus biarkan acuan sejuk sebelum melihat hasilnya….selamat mencube….semoga mendapat kek kukus pelangi yang terbaik

Resepi Ayam Masak Merah

Bahan-bahan ( untuk 4 orang )

  • 1/2 ekor ayam
  • sedikit garam kunyit
  • ## Bahan-bahan kisar ##
  • 4-5 biji cili kering
  • 1 cm halia
  • 2 ulas bawang putih
  • 1 labu bawang besar
  • 1 biji tomato-potong dadu
  • 1/2 cawan sos tomato
  • ## Bahan Hias ##
  • 1/2 biji bawang besar- potong bulat
  • kacang hijau secukupnya

Cara-cara

  1. Bersih ayam. Potong kecil-kecil dan gaul dengan garam kunyit. Goreng sehingga 2/3 masak
  2. Tumis bahan kisar kecuali sos tomato dan tomato sehingga naik bau. Kemudian barulah dimasukkan sos dan buah tomato. Tumis sehingga naik minyak.
  3. Masukkan ayam. Biar kuah jadi pekat. Sekali sekala hendaklah digaul balikkan.
  4. Bila kuah dah pekat bolehlah masuk bahan-bahan hias. Biar 1-2 minit. Kemudian padamkan api.

Ham and Cheese Buns

Sweet Bun Dough

Ingredients:

A: 400g High Protein Flour (Bread Flour) 100g All Purpose Flour 2Tbsp Milk Powder 60g Sugar 1/2tsp salt 3tsp yeast

B: 100g Overnight Sponge Dough

C: 180g water 2 large eggs

D: 80g Butter

Method:

Mix Ingredients A until well blended.

Add in B and gradually add in C. Use a dough hook to beat till you get a dough.

Add in D and continue beating on medium speed until you get a smooth and elastic dough.

Cover dough and let it proof for 40 minutes or till double in size.

Overnight Sponge Dough

Ingredients:

100g High Protein Flour 60g Water 1/4tsp yeast

Method:

Mix all ingredients. Knead well to form a dough.

Proof for 30 minutes and keep refrigerated overnight or at least 8 hours.

Ham and Cheese Bun

Ingredients:

About 16 pieces of ham, small pieces Grated cheddar cheese Mayonnaise Chopped parsley leaves

Method:

Divide dough into 25g each and roll it out.

Put a piece of ham in the middle. Roll it up tightly but reveal a little bit of the ham at the edge.

Let it proof for 40 minutes or double in size. Squeeze some mayonnaise on the top of the bun and sprinkle with cheese. Garnish with some chopped parsley leaves. Bake at 180 Celsius for about 20 minutes.

Nutella Cheesecake

Nutella Cheesecake Makes 1 cake | Prep Time: 20 mins | Bake Time: None (refrigerate for at least 4 hours) Adapted from Nigella Lawson

Ingredients:

10 oz graham crackers 5 tablespoons soft unsalted butter 1 13-oz jar Nutella (at room temperature) ¾ cup chopped toasted hazelnuts 1 lb cream cheese (at room temperature) ½ cup confectioners’ sugar (sifted)

Method:

Break the digestives into the bowl of a processor, add the butter and 15 ml or 1 tablespoon of Nutella, and blitz until it starts to clump. Add 25g/3 tablespoons of the hazelnuts and continue to pulse until you have a damp, sandy mixture.

Tip into a 23 cm/9-inch round springform and press into the base either using your hands or the back of a spoon. Place in the fridge to chill.

Beat the cream cheese and confectioners’ sugar until smooth and then add the remaining Nutella to the cream cheese mixture, and continue beating until combined.

Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining chopped hazelnuts on top to cover and place the tin in the fridge for at least four hours or overnight. Serve straight from the fridge for best results.

Grilled Coconut Chicken with Lemon Basil (Ayam Panggang Sulawesi)

GRILLED COCONUT CHICKEN WITH LEMON BASIL RECIPE (Ayam Panggang Sulawesi) Inspired byJames Oseland’s “CRADLE OF FLAVOR

Ingredients for the Flavoring Paste:

8 shallots, coarsely chopped 5 cloves of garlic, coarsely chopped 3 to 4 red Thai chilies (use according to your taste), coarsely chopped 4 tablespoon peanut oil 2 stalks of lemongrass cut into 2 inch long pieces 8 whole kaffir lime leaves 6 candlenuts (I found them in my Asian grocers) or unsalted macadamia nuts 1 piece of fresh turmeric root, peeled & ground, 2 tsp. 3 ½ teaspoons fresh grated ginger 1 ½ cups of unsweetened coconut milk 1/2 cup loosely packed fresh lemon basil (Thai basil can be used as an alternate) ¾ teaspoon salt 3 tablespoons fresh lime juice Cut up chicken

Method:

  1. To make the flavoring paste, place the shallots, garlic, red chilies, green chilies, candlenuts, turmeric, and ginger in a small food processor. Pulse until you have a smooth paste.
  2. Heat the 4 tbsp of oil in a large skillet (non-stick) over medium-low heat. When you add the paste in the oil, it should sizzle. Sauté constant until the shallots & garlic no longer smell raw & the paste begins to separate from the oil, Sauté for about 5 minutes. Now add the lemongrass, kaffir lime leaves, & basil, then Sauté some more for 3 minutes until the lemony aroma arises.
  3. Add the coconut milk and salt and stir well to combine with the flavoring paste. Raise the heat slightly and let the coconut milk come to a steady, gentle simmer, stirring occasionally, for about 10 minutes. Taste the broth. It should be spicy and rich.
  4. While the broth continues to simmer, rinse the chicken under cold running water and pat it dry. Poke the chicken flesh with a fork.
  5. Add the chicken to the coconut milk broth and cook in a steady simmer. Stirring every 5 minutes to prevent from burning and until the chicken is 3/4th cooked for about 30 – 40 minutes. Chicken should be tender and all the way cooked but not mushy or falling off the bones. You can transfer the chicken pieces to  another dish. And for the Coconut broth, it should have a  thick consistency, so let it cook and thicken some more.
  6. I grilled the chicken on my outdoor gas grill at medium-high heat. I grilled for 5 minutes on both sides of the chicken, until the attractive grill marks form!
  7. Menu suggestions: Lemongrass coconut rice & Javanese Carrots & Cucumbers Salad!

Chicken Kebab Recipe Makes 4 skewers

Ingredients:

1 skinless and boneless chicken breast (about 12 oz.) 1/2 green bell pepper (cut into big cubes) 1/2 yellow bell pepper (cut into big cubes)

Marinade:

1 1/2 tablespoons olive oil 1 1/2 tablespoons lemon juice 1/2 – 1 teaspoon paprika (if you like spicy, use 1 teaspoon) 1/2 teaspoon chili flakes 1/2 teaspoon ground cumin seeds 1/4 of one small onion 2 cloves garlic 1/4 teaspoon salt 1 tablespoon chopped fresh parsley leaves (or dried parsley)

For Grilling:

2 tablespoons olive oil (for brushing)

Method:

Cut the chicken into small cubes (a total of 16 pieces if you will), pat dry and marinate with the ingredients for 1 hour.

Thread four pieces of chicken meat with two pieces each of green bell pepper and yellow pepper (see the picture above for the order) onto a metal skewer or bamboo skewer. Repeat the same and make four skewers. Set aside.

Fire up your outdoor grill (or indoor grill) and grill the chicken kebab until cooked. While grilling, brush the chicken and bell peppers with olive oil. Serve hot.

Cook’s Note:

If you use bamboo skewers, soak them in cold water overnight so they don’t get burned during the grilling process.

  • 1kg tulang kambing @ tulang lembu              
  • 1 senduk cili kering/ cili boh              
  • *5 Biji Bawang besar               
  • *4 ulas bawang putih              
  • *1 inci halia              
  • 1/2 tin tomato pure (440gm)              
  • 1/2 botol sos tomato (435gm)              
  • 2 Biji telur- di kocok guna garfu pun ok              
  • 2 sdb tepung gandum              
  • 2 sup bunjut tulang Adabi               
  • Garam secukup rasa              
  • 3 sudu gula (kemanisan ikut suka)              
  • Sedikit minyak untuk menumis              
  • Bahan2 utk hiasan: Hirisan kobis, carrot, lada hijau & bawang goreng              

Cara-cara

  1.                                                 Tulang dicuci bersih dan direbus bersama 2 sup bunjut hingga empuk dan ketepikan                
  2.                                                 Tumiskan bahan2 yang dikisar,cili kering,setelah naik minyak masukkan tomato pure garam dan gula                 
  3.                                                 Masukkan tulang yang telah direbus dan air rebusan tadi, biarkan mendidih                
  4.                                                 Masukkan bancuhan tepung gandum anggaran 1/2 cawan, kacau rata..                
  5.                                                 Masukkan sos tomato dan akhir sekali masukkan telur yang telah dikocok tadi..                
  6.                                                 Ketika menghidang bolehlah taburkan hirisan cili hijau, kobis, dan bawang goreng..

  • 4 kuntum bunga cengkih              
  • 2 inci kulit kayu manis              
  • 6 biji buah pelaga              
  • 6 biji lada putih,ditumbuk              
  • 2 cawan beras              
  • 2 cawan air              
  • 1 cawan susu cair/fresh milk              
  • 2-3 titik pewarna kuning              
  • 1/2 cawan kismis              
  • 3 helai daun pandan              
  • untuk menghidang, bawang goreng dan buah badam              

Cara-cara

  1.                                                 Pijarkan minyak sapi dalam periuk.Goreng bwg besar dan bwg putih hingga kekuningan.                
  2.                                                 Masukkan kulit kayu manis,bunga cengkih,buah pelaga dan lada putih.Goreng selama 5minit.                 
  3.                                                 Masukkan beras,air,susu cair,daun pandan yg disimpulkan serta pewarna kuning.Kacau supaya semua bahan serata.Tutup periuk dan tunggu hingga air kering.                
  4.                                                 Masukkan kismis dan kacau rata.Setelah itu tanak nasi hingga betul2 masak.Ketika menghidang boleh letakkan bawang goreng serta buah badam.

Bahan-bahan ( 6 keping )

  • 1 1/2 cawan tepung gandum              
  • 1 sb susu pekat              
  • secubit garam              
  • 1/2 - 1 cawan air              
  • 1 sb minyak/marjerin/mentega              
  • marjerin/mentega-untuk salutan              
  • 3 biji telur - dipukul(saya gunakan 1 biji telur untuk 2 keping roti canai)              
  • Minyak-untuk menggoreng              

Cara-cara

  1.                                                 Campurkan tepung, garam dan susu pekat.  Gaul sebati.                
  2.                                                 Masukkan air sedikit demi sedikit ke dalam adunan tepung hingga doh tidak melekat di tangan.                  
  3.                                                 Masukkan pula minyak/marjerin/mentega.    Uli hingga menjadi doh yang lembut.(Jika doh lembik, tambahkan sedikit tepung)                
  4.                                                 Tutup doh dengan kain lembab/´cling film´ selama 30 minit.                
  5.                                                 Bahagikan doh tadi kepada 6 bebola kecil.  Salutkan setiap bebola kecil tadi dengan marjerin/mentega.  Simpan beberapa jam sebelum digunakan.                
  6.                                                 Sapukan minyak/mentega di meja kerja dan di tangan.  Ambil sebiji bebola, leperkan dan tebar/tarik menjadi bentuk 4 segi.  Letakkan telur yang telah dipukul di tengah-tengah.  Balutkan.                
  7.                                                 Goreng dengan api sederhana dengan sedikit minyak sambil dibalik-balikkan hingga masak.                
  8.                                                 Sesuai dihidangkan bersama kuah dal dan sambal ikan bilis.  Selamat mencuba.
